Chef Gerardo Vázquez Lugo

Over the evenings of December 8th, 9th and 10th, Sabores CDMX events (Flavours of Mexico City) along with Jefferson Alvarez, welcomed Chef Gerardo Vázquez Lugo to Cacao. Chef Gerardo Vázquez Lugo is well known for leading Mexico City’s Restaurante Nicos—one of San Pellegrino’s World’s 50 Best Restaurants in Latin America in 2016. And though the restaurant has been in the family for decades, Lugo transformed the appeal when he took over the kitchen back in 2006—turning a considerably humble family restaurant into an upscale establishment with a more progressive menu, whilst remaining respectful to its heritage recipes and traditions.

And for the three evenings, the talented duo created a beautiful menu that would highlight an array of authentic culinary experiences from their home region. Using traditional methods and authentic recipes, the results produced elevated, innovative and modern Mexican cuisine, which included: Prawn Clemole: soup with prawn, tomato, pumpkin and corn dough, followed by Manchamanteles Mole with Duck: confited duck with “manchamanteles” mole, apple, pear, and pineapple. And to finish was a decadent Chocolate Tamale with vanilla sauce.
